Mussels steamed with white wine using rendered iberico ham fat finished with ramp

Instructions
In a medium pot, render ham fat (3 Tbsp) over medium heat until golden and melty.
Add onions (¼ cup) and sweat until soft and translucent.
Toss in your herb stems (1 handful) and stir to bloom their aroma.
Add mussels (2 large handfuls) and coat them thoroughly in the fat and aromatics.
Pour in the white wine (½ cup), cover the pot, and steam until mussels open (about 3 minutes).
Toss in the ramp greens (2 handfuls) and let wilt off-heat.
In a wide bowl, lay down slices of that bread.
Spoon mussels and all that glorious broth over the bread.
Finish with a squeeze of lemon and a good glug of olive oil.
